Strawberry keto dessert — soufflé

Ingredients:

  • 300 g strawberries (you can use other berries) fresh or frozen
  • 30 g gelatin, I used dr. Oetker
  • 100 g erythritol
  • 2 tablespoons lemon juice 


You’ll get 15 bars like on the photo above. 

Nutritional value per one bar: 12.4 kcal/ 1.9 proteins/ 0.1 fats/ 1.2 net carbs

  1. Blend strawberries in the heatproof bowl.
  2. Add all ingredients. Use gelatin according instruction on the package.
  3. Put the bowl to heat in a water bath, stirring constantly. We are waiting for the gelatin and erythritol to dissolve. The mass should not boil.
  4. Take it off, let it cool down a bit.
  5. Begin to beat the mass with a mixer.
  6. Beat for 8-10 minutes, depending on the power of the mixer.
  7. The mass should increase in volume, turn white, become dense, the whisk will remain stripes.
  8. Cover the form with a food wrap.
  9. Pour the mass and smooth the surface.
  10. Cover with food wrap and put in the freezer for 1 hour.
  11. You’ll get an airy, elastic dessert with soufflé texture.
  12. Store for a couple of days in a refrigerator or in a freezer for a longer period. Let defrost before eating.
